Bakery’s dozen assortment muffins from one batch of batter! Blueberry, strawberry, raspberry, and banana nut flavors. Perfect for brunch and family gatherings.

Ingredients

Base Muffin Batter:

  • 2 cups of flour
  • 1 cup of granulated sugar
  • 1 tablespoon of baking powder
  • 1/2 teaspoon of sodium bicarbonate (baking soda)
  • 1/4 teaspoon of salt
  • 1 cup of buttermilk
  • 1/2 cup of butter
  • 2 eggs
  • 1 teaspoon of vanilla extract

For each flavour:

Blueberry Muffins

  • 1/2 cup of blueberries

Strawberry Muffins:

  • 1/2 cup of strawberries

Raspberry Muffins:

  • 1/2 cup of raspberries

Banana Nut Muffins

  • 1/2 cup of bananas
  • 1/4 cup of nuts

Instructions

  1. Preheat
    Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. Prepare Base Batter
    In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together buttermilk, melted butter, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Divide batter
    Divide the base batter evenly into four portions.
  6. Flavour each portion
    Gently fold fruits for each separate bowl for each flavour.
  7. Bake
    Spoon each flavored batter into the muffin cups, filling each about 2/3 full
  8. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool
    Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Feel free to swap the fruits for preferred tastes or seasonal.
