These low-sugar banana bran muffins make for a delicious and healthier snack or breakfast option. Adjust the sweetness according to your preference, and feel free to customize with your favorite add-ins

Ingredients

  • 1 cup of banana(s), ripe, mashed (about 2-3 bananas)
  • 1/2 cup of applesauce, unsweetened
  • 1/4 cup of Vegetable oil, or melted coconut oil
  • 1/4 cup of honey, or maple syrup (adjust to taste)
  • 2 eggs, large
  • 1 teaspoon of vanilla extract
  • 1 cup of wheat bran
  • 1 cup of flour, whole wheat
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of sodium bicarbonate (baking soda)
  • 1/2 salt
  • 1/2 teaspoon of cinnamon, (optional)
  • 1/2 cup of nuts, chopped or dried fruit – both optional

Instructions

  1. Preheat
    Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it.
  2. Mix
    In a large bowl, combine mashed bananas, applesauce, vegetable oil, honey or maple syrup, eggs, and vanilla extract. Mix well.
  3. Whisk dry ingredients
    In a separate bowl, whisk together wheat bran, whole wheat flour, baking powder, baking soda, salt, and cinnamon.
  4. Combine
    Add the dry ingredients to the wet ingredients and stir until just combined. Be careful not to overmix.
  5. If desired, fold in chopped nuts or dried fruit.
  6. Bake
    Spoon the batter into the muffin cups, filling each about 2/3 full.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool and serve
    Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
